Kale Chips – Attempt 1 May08

Kale Chips – Attempt 1

Quick post, because I had requests for pictures. My tweeps Millie and Leigh were talking about kale chips this morning, and I had kale left from my stew and my breakfast shake, so perfect time to finally try these things. Step 1: cut the leaves off the stems/spines. Step 2: toss in olive oil, seasalt, lemon juice, hot chili powder, black pepper. Bake at 300° for 20 minutes, on a cookie sheet and/or parchment paper. WALLA! Here they are with some space, so you can see what an actual “chip” looks like. I used too much salt, and a whole lemon. Next time, only 1/2 lemon, and less salt. Otherwise, crisp and crunchy, and a great way...

Container gardening – Phase 1 May05

Container gardening – Phase 1

Getting the first batch of herbs potted. Three basils, oregano, and thyme from various farmers’ market vendors, mint and onions and chives from my friend Holland’s hyper-productive gardens. Herbs Mint Basil (Regular, Sweet, and Serata) Oregano Thyme Onion and chives Oh, and that sad-looking basil? I bought that last week for immediate use on pizza day. We used every leaf. I figured I’d pot the rest and let it recover. It will.

Angelos’ Kitchen – Pizza 4/28/2012

My 4HB nonsense has me looking forward to Saturday Cheat Days like nobody’s business. Last Saturday was the first one, and of course the meal of honor was pizza. My guest, the lovely and talented M, volunteered to make the sauce. I looked around the tubez for different dough recipes from my usual, because I wanted something that would stay thin crispy and not puff up like bread, a problem that has vexed me the last couple times. Turns out the difference was not my ingredients nor my measurements, but the temperature. This time used cold water instead of my usual 105°, and put the dough in the fridge immediately. A couple hours before...

This crazy diet I’m on for a month has me searching for filling side dishes. I’ve got a freezer full of meat because of the Plan D from Henry’s, but most of the things I would normally make are verboten under this 4HBish thing I’m doing. I’m been avoiding pasta,...

More PR fun for Pric...

Whatever you think about Price Chopper’s move to HALVE the gas discounts you accumulate with your rewards card, I think we can add the announcement itself to the pile of evidence that they have no idea what they’re doing with PR. Anyway, now that the OUTRAAAAAAGE has gone away, I...

Adventures in Homebr...

This past Saturday Jeff and Bill and I set out to brew the three joint beers I mentioned last week. I say set out because… for the first time ever, we had a total brewing fail. The day started smoothly enough. First up was the Ahtanum Brown. I don’t have any of the recipes on me,...

Adventures in Homebr...

Our favorite local beer bar, The Ruck, is holding an Extreme Brewing Contest limited to 6 pre-determined beer styles. I love this format. It keeps the judges focused, and it forces some real creativity on the parts of the entrants. My brewing partners and I decided to attack the full...

Angelos’ Kitchen – Greek Night! Mar25

Angelos’ Kitch...

I invited a friend over for dinner, drinks, and conversation Saturday, and settled on a Greek menu once I determined she had no allergies or dislikes, and loves garlic. Here’s what we wound up with, for appetizers and dinner. Tirokafteri: One large red pepper, roasted, peeled, and...

Homebrew results!

Since I’m stuck in the kitchen today anyway making food for the week, I figured I’d create a complete disaster and do some work with my existing brews. I finally kicked my Oatmeal Stout last weekend when I brought a growler up to a St. Patrick’s Day party, and I decided to...
